Ingredients
- 3/4 c (6 oz) dates
- 1 c cake flour
- 1 t baking powder
- 3/4 t cinnamon
- 1/2 t salt
- pinch of nutmeg
- 3/4 c vegetable oil
- 1/2 c brown sugar
- 1/4 c honey
- 2 eggs
- 1 t vanilla
Directions
Preheat oven to 325. Place dates in a bowl and cover with hot water.
Soak while preparing cake batter. In a large mixing bowl, sift together
cake flour, baking powder, cinnamon, salt, and nutmeg. In a medium
mixing bowl, whisk together vegetable oil, brown sugar, honey, eggs, and
vanilla. Pour wet into dry and stir. Drain water from dates and chop
them into small chunks. Grease loaf pan and pour batter into pan. Bake
in oven for 1 hour. Remove and set out to cool. Enjoy!
