If unavailable, use medium sized Butternut Squash.<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 T olive oil<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 medium onion, chopped<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 stalks celery, chopped<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 clove garlic, minced<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 T freshly grated ginger root<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 t curry powder<\/li>\n*\u20281\/4 t crushed red peppers<li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 t turmeric<\/li>\n*\u20281 t ground cumin<li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 t coriander<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">4 c vegetable broth<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 t brown sugar<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 cup heavy cream and milk. Any proportion you like.<\/li><\/ul><\/div><br \/>\n<div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4>Peel, seed and chop pumpkin. Cut the pumpkin in half, scoop out the\nseeds and cut the pumpkin into manageable vertical slices. Cheese\npumpkin rind is very tough. I cut it off by laying the slices sideways\non a chopping board and cutting downward. Chop pumpkin into 2\u201d pieces<\/p>\n<p>In heavy stockpot or Dutch Oven heat olive oil until hot, but not\nsmoking. Throw in onions, celery and garlic. Cook, stirring occasionally\nand adjusting flame to keep vegetables from browning, until they begin\nto soften, about 5 minutes.<\/p>\n<p>Add curry powder, red pepper, turmeric and cumin. Lower flame and cook,\nstirring occasionally, to allow spices\u2019 flavor to bloom fully\u2014about 5\nmore minutes.<\/p>\n<p>Add spices and allow them to cook for a few minutes, stirring to keep\nthem from burning.<\/p>\n<p>Add pumpkin, stir to coat with spices and cook 5 more minutes, stirring\noccasionally and adjusting flame to keep vegetables from browning.<\/p>\n<p>Add hot broth, cover pot, and bring to boil, then immediately reduce to\nlow simmer.<\/p>\n<p>Simmer broth and vegetables for 30 minutes, until very soft.<\/p>\n<p>Spoon broth and vegetables into a food processor. Pur\u00e9e until very\nsmooth. Depending on the size of your food processor, you may need to\nprocess in 2 batches.<\/p>\n<p>Pour pur\u00e9ed pumpkin back into pot. (At this point, pumpkin soup can be\nset aside, stored or frozen until ready to serve. When ready to serve,\nthaw or reheat pumpkin over low flame, stirring occasionally to keep\npur\u00e9e from scorching.)<\/p>\n<p>Stir in cream and milk in any proportion you like\u2014I like more cream.\nHeat for 1-2 more minutes. Ladle into tureen or bowls and serve.
