{"id":816,"date":"2017-02-19T07:07:12","date_gmt":"2017-02-19T07:07:12","guid":{"rendered":"http:\/\/192.168.1.11\/bean-soup-with-cabbage-winter-squash-and-farro\/"},"modified":"2017-02-19T07:07:12","modified_gmt":"2017-02-19T07:07:12","slug":"bean-soup-with-cabbage-winter-squash-and-farro","status":"publish","type":"post","link":"https:\/\/recipes.eliteelise.com\/index.php\/2017\/02\/19\/bean-soup-with-cabbage-winter-squash-and-farro\/","title":{"rendered":"Bean Soup with Cabbage, Winter Squash, and Farro"},"content":{"rendered":"<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><div class=\"jetpack-recipe-content\"><br \/>\n<div class=\"jetpack-recipe-notes\"><br \/>\nServes 6<br \/>\n<\/div><br \/>\n<div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><ul><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 lb borlotti or pinto beans, soaked overnight or for six hours in 1 quart water<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 T extra virgin olive oil<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 medium onion, chopped<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 medium carrot, chopped<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 small celery stalk, with leaves, chopped<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 t chopped fresh sage<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">4 large garlic cloves, minced<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 lb green cabbage, cored and shredded<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">Salt and freshly ground pepper<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 lb butternut squash, peeled, seeded and diced (about 2 cups)<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">A bouquet garni made with a few sprigs each thyme and parsley, 2 sage leaves and a Parmesan rind<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">Generous 1\/2 t dried rosemary, crumbled<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 (14-oz) can chopped tomatoes, with liquid<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 c farro (spelt), cooked<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">Freshly grated Parmesan for serving<\/li><\/ul><\/div><br \/>\n<div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4>Heat 1 tablespoon of the olive oil over medium heat in a large, heavy\nsoup pot or Dutch oven. Cook the onion until it begins to soften, about\nthree minutes. Add the carrot, celery and sage, and continue to cook,\nstirring, until the vegetables are tender, about five minutes. Add half\nthe garlic. Cook, stirring, until fragrant, about one minute. Add the\ncabbage and a generous pinch of salt, and cook, stirring often, until\nthe cabbage is limp, about 10 minutes. Drain the soaked beans, and add\nthem to the pot, along with the squash, bouquet garni and 2 quarts\nwater, or enough to cover by two inches. Bring to a boil, reduce the\nheat, add salt to taste and simmer 1 1\/2 to 2 hours until the beans are\ntender. Remove the bouquet garni, and discard.<\/p>\n<p>While the soup is simmering, heat the remaining olive oil over medium\nheat in a medium-size nonstick skillet. Add the remaining garlic and the\nrosemary. Cook for a half-minute to a minute until fragrant, and stir in\nthe tomatoes. Add salt. Cook for 10 to 15 minutes, stirring often, until\nthe tomatoes have cooked down and the mixture is thick, beginning to\nstick to the pan and delicious. Stir into the soup along with the cooked\nfarro. Continue to simmer for another 30 minutes. Taste and adjust salt,\nand add lots of freshly ground pepper.
