{"id":802,"date":"2017-02-19T07:07:09","date_gmt":"2017-02-19T07:07:09","guid":{"rendered":"http:\/\/192.168.1.11\/cheesy-twice-baked-potatoes\/"},"modified":"2017-02-19T07:07:09","modified_gmt":"2017-02-19T07:07:09","slug":"cheesy-twice-baked-potatoes","status":"publish","type":"post","link":"https:\/\/recipes.eliteelise.com\/index.php\/2017\/02\/19\/cheesy-twice-baked-potatoes\/","title":{"rendered":"Cheesy Twice-Baked Potatoes"},"content":{"rendered":"<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><div class=\"jetpack-recipe-content\"><br \/>\n<div class=\"jetpack-recipe-notes\"><\/p>\n<p><\/div><br \/>\n<div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><ul>For the baked potatoes:<li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">8 large russet potatoes, scrubbed<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 T olive oil, divided<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/4 t salt<\/li>\n<p>For the cheddar cheese sauce:<li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/3 c vegan margarine<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/4 c chopped onion<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 c chopped potatoes, peeled<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/4 c chopped carrots<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 t minced garlic<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 t smoked paprika<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 t salt<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 c water<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/4 c raw cashews<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/8 t Dijon mustard<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 T fresh lemon juice<\/li>\n<p>For the cashew sour cream:<li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 c raw cashews<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 c water<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 T miso<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">4 t white wine vinegar<\/li>\n<p>For the mashed potato filling:<li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/4 c vegan margarine<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">3\/4 c unsweetened non-dairy milk<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 t salt<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 t freshly ground black pepper, plus more for garnish<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">6 scallions, thinly sliced, divided<\/li><\/ul><\/div><br \/>\n<div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4>Preheat oven to 375 degrees. On a sheet pan, place potatoes and rub with\n1 tablespoon oil and salt. Pierce each potato several times with a fork.\nBake for 70 minutes until soft.<\/p>\n<p>For the cheddar cheese sauce, in a saut\u00e9 pan over medium heat, add\nmargarine and onion and cook for 5 minutes. Add potatoes, carrots,\ngarlic, paprika, and salt and saut\u00e9 for 5 minutes. Add water and bring\nto a boil. Cover pan and simmer for 20 minutes, or until vegetables are\nvery soft. In a dry blender, process cashews into a fine powder. Add\nmustard, lemon juice, and potato mixture. Process until cheese sauce is\nsmooth and set aside.<\/p>\n<p>For the cashew sour cream, in a blender or food processor, blend\ncashews, water, miso, and vinegar until completely smooth.<\/p>\n<p>Remove baked potatoes from oven and cut in half, lengthwise. Using a\nspoon, carefully scoop out potato from skins, leaving 1\/4&#8243; layer of\npotato. Brush potato shells with remaining olive oil and return to\npreheated oven for 15 minutes.<\/p>\n<p>For the mashed potato filling, in a medium bowl, mash potato filling\nwith margarine, non-dairy milk, salt, and pepper. Fold in half the\ncheese sauce, half the sour cream, and half the scallions. Fill each\nbaked potato skin with mashed potato mixture. Top with a dollop of\ncheese sauce and a drizzle of sour cream. Garnish with remaining\nscallions and pepper as desired. Bake loaded potato skins for 15\nminutes, until thoroughly heated and tops are browned.
