{"id":789,"date":"2017-02-19T07:07:06","date_gmt":"2017-02-19T07:07:06","guid":{"rendered":"http:\/\/192.168.1.11\/kubideh-kookoo-sabzi-sandwich\/"},"modified":"2017-02-19T07:07:06","modified_gmt":"2017-02-19T07:07:06","slug":"kubideh-kookoo-sabzi-sandwich","status":"publish","type":"post","link":"https:\/\/recipes.eliteelise.com\/index.php\/2017\/02\/19\/kubideh-kookoo-sabzi-sandwich\/","title":{"rendered":"Kubideh &#038; Kookoo Sabzi Sandwich"},"content":{"rendered":"<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><div class=\"jetpack-recipe-content\"><br \/>\n<div class=\"jetpack-recipe-notes\"><ul>Barbari Bread<li class=\"jetpack-recipe-notes\">Yields: approximately 40 servings<\/li>\n<p>Kubideh<li class=\"jetpack-recipe-notes\">Yields: approximately 40 servings<\/li><\/ul><\/div><br \/>\n<div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><\/p>\n<h5>Barbari Bread<\/h5>\n<h6>Bread:<\/h6>\n<ul>\n<li>13 cups flour<\/li>\n<li>6 cups water<\/li>\n<li>3 T active dry yeast<\/li>\n<li>4 t baking powder<\/li>\n<li>4 t salt<\/li>\n<li>black or white sesame seeds, poppy seeds, or nigella seeds to roll into bread<\/li>\n<\/ul>\n<h6>Sauce:<\/h6>\n<ul>\n<li>2 t. flour<\/li>\n<li>2 t. baking soda<\/li>\n<li>1 1\/3 c. water<\/li>\n<\/ul>\n<p>OR just use olive oil<\/p>\n<h5>Kubideh<\/h5>\n<ul>\n<li>10 lbs. ground beef (85:15 lean to fat, or better)<\/li>\n<li>10 eggs<\/li>\n<li>2 bunches finely chopped parsley<\/li>\n<li>5 grated medium yellow onions<\/li>\n<li>6 T turmeric<\/li>\n<li>4 T each: cinnamon, salt, pepper<\/li>\n<li>2 T each: baking powder, canola oil (only if the beef seems dry)<\/li>\n<\/ul>\n<h5>Kookoo Sabzi<\/h5>\n<h6>Grind the following in food processor:<\/h6>\n<ul>\n<li>2c mint<\/li>\n<li>2c basil<\/li>\n<li>2 bunch parsley<\/li>\n<li>2 bunch cilantro<\/li>\n<li>3 bunch scallion<\/li>\n<li>2 bunch dill<\/li>\n<li>3 qt spinach<\/li>\n<\/ul>\n<h6>Grind in food processor until the size of ice cream topping:<\/h6>\n<ul>\n<li>1c walnuts<\/li>\n<\/ul>\n<h6>Whisk ingredients below:<\/h6>\n<ul>\n<li>1\/2c flour<\/li>\n<li>1T turmeric<\/li>\n<li>1T salt<\/li>\n<li>enough egg to wet it all, around 10 (start with 8, then add more once food processor ingredients have been added)<br \/>\n<\/div><br \/>\n<div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4><ol itemprop=\"recipeInstructions\">\n<h5>Barbari Bread<\/h5>\n<\/li>\n<\/ul><li class=\"jetpack-recipe-directions\">Dissolve yeast in 3 c warm water, and let it stand for 3 minutes.<\/li><li class=\"jetpack-recipe-directions\">Mix the flour, baking powder, and salt together in a separate bowl.<\/li><li class=\"jetpack-recipe-directions\">Pour the yeast mixture and the additional 3 cups of water into the center of the flour. Fold dry ingredients into wet, and mix until combined.<\/li><li class=\"jetpack-recipe-directions\">Knead dough for 15 minutes, or until dough becomes smooth and elastic.<\/li><li class=\"jetpack-recipe-directions\">Divide dough into 8 round pieces on baking sheets that have been floured.<\/li><li class=\"jetpack-recipe-directions\">Cover with greased wax paper, and let sit in a warm place to rise for 1 1\/2 hours (until doubled in bulk).<\/li><li class=\"jetpack-recipe-directions\">Once the dough rises, separate each piece of dough into small pieces half the size of your palm. You will probably need to use a good amount of flour to roll bread. Roll with floured pin on floured board, until as thin as possible. Sprinkle sesame seeds into bread, and roll them into bread.<\/li><li class=\"jetpack-recipe-directions\">Place all sauce ingredients in microwave safe dish, and microwave for a minute or two.<\/li><li class=\"jetpack-recipe-directions\">Put bread on grill and brush with sauce (or olive oil). Grill for no longer than 4-6 minutes.<\/li>\n<h5>Kubideh<\/h5><li class=\"jetpack-recipe-directions\">Mix eggs and spice ingredients together first, then add meat.<\/li><li class=\"jetpack-recipe-directions\">Get a small bowl of water, and use this to keep hands wet throughout<\/li>\nthe process of forming the meat.<li class=\"jetpack-recipe-directions\">Roll into ball size of your palm.<\/li><li class=\"jetpack-recipe-directions\">Flatten to the length of your hand.<\/li><li class=\"jetpack-recipe-directions\">Dimple with fingers.<\/li><li class=\"jetpack-recipe-directions\">Set aside in baking dishes and refrigerate excess.<\/li><li class=\"jetpack-recipe-directions\">Grill each for 4 minutes.<\/li>\n<h5>Kookoo Sabzi<\/h5>\n<p>Add top ingredients to whisked ingredients. Add more eggs if needed.\nBake in 350 oven, in greased pans, until cooked through.
