{"id":757,"date":"2017-02-19T07:06:59","date_gmt":"2017-02-19T07:06:59","guid":{"rendered":"http:\/\/192.168.1.11\/sauteed-fennel-with-quick-tomato-sauce-and-parmesan\/"},"modified":"2017-02-19T07:06:59","modified_gmt":"2017-02-19T07:06:59","slug":"sauteed-fennel-and-tomato-sauce","status":"publish","type":"post","link":"https:\/\/recipes.eliteelise.com\/index.php\/2017\/02\/19\/sauteed-fennel-and-tomato-sauce\/","title":{"rendered":"Saut\u00e9ed Fennel &#038; Tomato Sauce"},"content":{"rendered":"<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><div class=\"jetpack-recipe-content\"><br \/>\n<div class=\"jetpack-recipe-notes\"><\/p>\n<p><\/div><br \/>\n<div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><ul><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 small fennel bulbs (about 1 1\/2 lbs)<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/4 c olive oil<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">4 medium cloves garlic, minced<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 c drained canned whole tomatoes, juice reserved<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 t salt<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/4 t freshly ground black pepper<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 lb pasta (fusilli or other short, curly shape)<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">freshly grated Parmesan cheese to taste<\/li><\/ul><\/div><br \/>\n<div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4><br \/>\nBring 4 quarts of salted water to a boil in a large pot for cooking the<br \/>\npasta.<\/p>\n<p>Remove the green stems and the fronds from the fennel. Discard the<br \/>\nstems. Chop the feathery fronds and reserve at least 1 T. Remove any<br \/>\nblemished or tough layers from the fennel bulb and trim a thin slice<br \/>\nfrom the base. Cut the bulb in half lengthwise through the base. Lay<br \/>\neach half cut side down on a work surface and cut it into very thin<br \/>\nslices. Set the fennel aside.<\/p>\n<p>Heat the oil in a large saut\u00e9 pan. Add the garlic and saut\u00e9 over medium<br \/>\nheat until lightly colored, about 1 minute. Stir in the sliced fennel<br \/>\nand continue cooking until the fennel has softened slightly and is just<br \/>\nstarting to become golden, about 8 minutes.<\/p>\n<p>Coarsely chop the tomatoes and add them to the pan along with 1\/2 cup of<br \/>\ntheir packing juice, the salt, and the pepper. Use the back of a spoon<br \/>\nto break apart the tomatoes. Simmer gently, stirring occasionally and<br \/>\ncontinuing to break apart the tomatoes, until the fennel has softened<br \/>\ncompletely and the sauce has thickened, about 20 minutes. Taste for salt<br \/>\nand pepper and adjust seasonings if necessary.<\/p>\n<p>While preparing the sauce, cool and drain the pasta. Toss the hot pasta<br \/>\nwith the fennel sauce and the chopped fennel fronds. Mix well and<br \/>\ntransfer portions to warm pasta bowls.
