{"id":756,"date":"2017-02-19T07:06:58","date_gmt":"2017-02-19T07:06:58","guid":{"rendered":"http:\/\/192.168.1.11\/roasted-acorn-squash-macaroni-and-cheese\/"},"modified":"2017-02-19T07:06:58","modified_gmt":"2017-02-19T07:06:58","slug":"roasted-acorn-squash-macaroni-and-cheese","status":"publish","type":"post","link":"https:\/\/recipes.eliteelise.com\/index.php\/2017\/02\/19\/roasted-acorn-squash-macaroni-and-cheese\/","title":{"rendered":"Roasted Acorn Squash Macaroni and Cheese"},"content":{"rendered":"<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><div class=\"jetpack-recipe-content\"><br \/>\n<div class=\"jetpack-recipe-notes\"><\/p>\n<p><\/div><br \/>\n<div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><ul><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 lb rigatoni (penne, or elbows)<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 lb acorn squash<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">4 c lowfat milk<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">6 T flour<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">5 T unsalted butter<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 t smoked paprika<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">kosher salt, sea salt and fresh ground pepper to taste<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">8 oz aged white cheddar cheese<\/li><\/ul><\/div><br \/>\n<div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4>Preheat oven to 375 degrees. Cut the acorn squash into 2 halves. Remove\nthe seeds and membrane. Divide 1 tablespoon of the butter and set inside\neach cavity. Rub the cavities with a spot of sea salt and place into the\noven to roast for about 45 minutes or until tender.<\/p>\n<p>Remove the squash from the oven. Set aside to cool. Turn the oven down\nto 350 degrees. Bring a large pot of well salted water to a boil. Add\nthe pasta and cook at a rolling boil until just tender. Drain. Rinse.\nSet aside.<\/p>\n<p>Chop the squash into bite size pieces being careful to avoid any skin.\nBring the milk to just a boil in a heavy saucepan. Set aside.<\/p>\n<p>Melt the butter mixture to the milk and whisk well to get rid of lumps.\nAdd 1\/2 t of paprika. Season with salt and pepper. Return to heat. Cook\nthe mixture over medium heat, whisking constantly until it&#8217;s smooth and\nit thickens, about 5 minutes.<\/p>\n<p>Add milk mixture to the pasta and coat. Mix in squash pieces as well.\nPour into a 9 x 12 baking dish. Spread the grated cheese over the top of the pasta\nmixture. Sprinkle the top with the remaining paprika.<\/p>\n<p>Bake for 25 minutes.
