Add onion, cover, and\ncook until softened, about 5 minutes. Remove lid and stir in garlic,\nginger, cumin, coriander, curry powder, turmeric, salt, and pepper. Cook\nuntil fragrant, about 2-3 minutes.<\/p>\n<p>Add tomatoes, lentils, and water and bring to a boil. Reduce heat to\nmedium-low and simmer until lentils are soft, about 40 minutes. Stir in\nspinach and cook for 2 minutes, or until wilted, then stir in steamed\ncauliflower an cook 1 minute to heat through.
