Ingredients
- 1 c yellow cornmeal
- 1/2c bread crumbs
- 1/2 t kosher salt
- 1/2 t freshly ground black pepper
- 1/2 t crushed red pepper
- 1/2 c buttermilk
- 1 egg, lightly beaten
- 1 lb fresh okra, trimmed and cut into 3/4 inch slices
Directions
Preheat oven to 450. Combine dry ingredients in a shallow dish, set
aside. Whisk wet ingredients in a large bowl. Add okra to wet
ingredients, toss to coat. Let stand minutes. Dredge okra in dry
mixture. Place okra in a jelly roll pan, coated with cooking spray.
Sprinkle with additional salt. Bake for 30-35 minutes, until okra is
golden brown and crispy.
